Cucumbers are good.....

Cucumbers have unique texture and cool taste. Although less nutritious than most of the fruit, fresh cumber seeds are source of Vitamin C, Vitamin K and potassium, and also providing dietary fibre, vitamin A, Vitamin B6, thiamin, folate, pantothenic copper and manganese.
 
 
 
Cucumber juice is often recommended as source of silica to improve health of the content makes it naturally hydrating - a must for glowing skin. Cucumbers are also used tropically for various types of skin problems, including swelling under the eyes and sunburn. Two compounds in cucumbers, ascorbic acid and caffeic acid, prevent water retention, which may explain why cucumbers applied tropically are often helpfully for swollen eyes, burns and dermatitis.

Check before buying cucumbers

Cucumbers should be firm form top to bottom. They are often sold pre-wrapped in plastic and can be stored in the salad drawer of the fridge for up to a week. But remember to discard it if it gets soggy.

Cooking cucumbers

Whether you peel a cucumber or not always wash it if you don't intend to peel it. Cucumbers are normally served raw, but are surprisingly good when cooked. Cut the cucumbers into wedges, remove the seeds and then simmer for few minutes until tender. Once drained, returned the cucumber to the pan and stir in a little cream and seasoning.

Marinated Cucumbers Salad Recipe

Ingredients
3 medium sized cucumbers, thinly sliced, 1 medium size onion, sliced and separated into rings
1 cup thin sliced carrots
1/2 cup sliced celery
2 to 4 tbs chopped red bell pepper
1 cup vinegar
1/4 cup olive or vegetable oil
1/4 cup sugar
1 tsp fresh chopped celery salt and pepper to taste+
iceburg lettuce
Methods
Combine cucumbers, onions, carrots, celery and red bell pepper in a large bowl.
In a separate bowl, mix remaining ingredients except lettuce.
Pour over vegetables and toss lightly. Cover and chill 8-10 hours. Drain and serve in a lettuce-lined bowl.
