Besides, the compound '' dithiolthiones found in cauliflower has been reported to inhibit the replication of the AIDS inducing HIV-virus."
Dr Kowsalya has also conducted a study mat showed cauliflower leaves to be good meals in themselves,, "The outer greens are normally discarded, but pur study showed they can easily be incorporated into foods such as vada, ado, chapattis and the like. The leaves were found to be rich in macro and micronutrients and they are an excellent source of anti-oxidants like beta-carotene, vitamin C, iron, selenium, copper and zinc. These anti-oxidants are helpful in fighting diseases like diabetes, cancer and cardiovascular disorders."
Excessive intake of cauliflowers, however, may lead to goiter. Choose fresh, firm flowers without blemishes, dip in hot water or salt water to remove worms and run under tap water to remove any residue pesticides.
